OUR KITCHEN

The Old Firehouse runs a "scratch" kitchen, which means what you get is always house-made, fresh, original and delicious!

Our Chefs seek the best ingredients from the Cowichan Valley and beyond, using them to create a selection of dishes you won't find anywhere else.  The menu is seasonally updated with new offerings, so there's always something new to try.

CHEY THOMAS PETERSON, Executive Chef

Chey Peterson, originally from Calgary AB, has worked in fine dining, catering and street vending across Canada for over 15 years. He currently resides in Cobble Hill on a small acreage with his wife and two daughters where they love to garden and raise chickens. 

In 2010 he launched his own business in Canmore AB, catering and teaching cooking classes. Most recently he was chef and owner for Kaleidoscope Creative, and had his own market stand at the Duncan Farmers Market for nearly 4 years. Many of you may also recognize him, as he has been with us at the Old Firehouse for over 4 years waiting tables!

Albert (AJ) Carswell, Chef de Cuisine

AJ was born and raised in the Cowichan Valley. He started his restaurant career working at the City Square Grill, and then developed his talents and passion for food through a varied background, both here in the Cowichan Valley and in Vancouver.

 AJ enjoys creating Italian and West Coast comfort cuisine, always seeking to develop unique and delicious plates!


Tues/Wed/Thurs: Dinner Menu Served 5 pm - 9 pm

Friday/Saturday: Dinner Menu Served 5 pm - 10 pm
