OUR KITCHEN

The Old Firehouse runs a "scratch" kitchen, which means what you get is always house-made, fresh, original and delicious!

Our Chefs seek the best ingredients from the Cowichan Valley and beyond, using them to create a selection of dishes you won't find anywhere else.  The menu is seasonally updated with new offerings, so there's always something new to try.

Chris Blom, Executive Chef

Chis is a native of the Cowichan Valley. After completing schooling in Calgary, Alberta, he returned to the Valley in 2009. Chris has been with The Old Firehouse since 2015, first working under his brother, Red Seal Chef Ian Blom. Chris’s culinary aptitude has grown rapidly over the years, and his work has proven to be invaluable to the growth of The Old Firehouse.

Chris has fun with a myriad of spices and flavours, particularly Indian and Thai cuisines.

Albert (AJ) Carswell, Chef de Cuisine

AJ was born and raised in the Cowichan Valley. He started his restaurant career working at the City Square Grill, and then developed his talents and passion for food through a varied background, both here in the Cowichan Valley and in Vancouver.

 AJ enjoys creating Italian and West Coast comfort cuisine, always seeking to develop unique and delicious plates!
